About Me

My Photo
A homeschooling mother of one teenager and a little. In 2001, I resigned from my 13 year position as a case manager to homeschool my oldest who was a preschooler at the time, and later a daughter who came along in 2005. This is by far the hardest job I've ever loved. My husband of nearly 20 years supports us as a fire fighter and EMT.

Keeping the Weight Off

This time of year is difficult to maintain or lose weight. I recently lost 25 pounds and want to keep it off. I had been eating salads to fill me up, but with the cooler weather, a salad just doesn't quell the cravings. I am going to be making savory vegetable soups to fill the place of the salads. Here are two frugal soup recipes that are low calorie and full of vitamins and minerals:

Vegetable Scrap Broth

Unlimited(Nutrisystem Approved Veggies) Soup Recipe

Update: I left my vegetable soup chunky - vegetable stew,  because it's more filling for winter time. I used a can of chicken broth, a can of water, a large can pureed tomatoes, collard greens, broccoli, carrots, mushrooms, some leftover pumpkin puree, caramelized onions and garlic, and a small can of butter beans. I used a little hot sauce and other seasonings. This recipe is not the same as the one for the Nutrisystem soup above, but it is close. I'm not sure how many servings there are in this batch, but it fills half my stock pot. I'll be freezing most of it.

Yay for the weightloss! But, boy, it really is hard to upkeep at this time of year. I'm with you: a salad just doesn't cut it when what you want is pumpkin bread! Thanks for these recipes, tho. Good for the cause! :)
