In 2001, I resigned from my 13 year position as a case manager to homeschool my oldest who was a preschooler at the time, and later a daughter who came along in 2005. This is by far the hardest job I've ever loved. My husband of nearly 20 years supports us as a fire fighter and EMT.

Yogurt Popsicle Recipe

From the More-with-Less Cookbook(on my sidebar), Yogurt Popsicles:

Stir together:
1 pt.plain yogurt
6T.(1/2 small can) frozen orange juice concentrate
1t. vanilla(optional)

Pour into mold(s) and freeze. Makes 6-8 popsicles. We used a popsicle mold purchased from a local dollar store.The popsicles were gone quickly, so I'll be making this again.

I'm going to try these! We use Stoneybrook LF-FF organic yogurt and I know this will be our new Summer treat! (Especially for my Husband!) Thank you!

Yes - quitting a career can be a loss, but as you say, the gains are so worth it! I fully understand.

I like Stoneybrook as well...that's what we usually get. It's the only plain one at out local grocery. I've got a yogurt machine, but I've not used it lately. We've drifted away from yogurt for a while, but warm weather should get me back to it.
