In 2001, I resigned from my 13 year position as a case manager to homeschool my oldest who was a preschooler at the time, and later a daughter who came along in 2005. This is by far the hardest job I've ever loved. My husband of nearly 20 years supports us as a fire fighter and EMT.

Easy French Bistro Inspired Meatless Meal

From the Food Network's Barefoot Contessa: "Ina makes Jeffrey a French inspired meal based on bistro favourites barefoot style -On the menu Roasted Butternut Squash Salad w/Warm Cider Vinaigrette, Easy Sole Meuniere and French Apple Tart."

I just saw this episode of the Barefoot Contessa on the Food Network. These recipes were very simple, nutritious, and full of flavor. I plan to make all but the French Apple Tart later this week, or next. Although, the tart would be a nice Fat Tuesday treat.
