Recipe: Applesauce Bread

I had some mixed berry applesauce from Target which was not a hit with the children, so I turned it into applesauce bread using this recipe from Allrecipes.com which I amended(in red).

INGREDIENTS

* 3 cups all-purpose flour
* 3 eggs
* 2 cups white sugar(one brown, 1/2 cup white)
* 1 cup vegetable oil(1/2 cup oil)
* 2 cups applesauce
* 1 cup raisins (leftover mashed papaya)
* 1 teaspoon ground cinnamon
* 1 teaspoon baking soda
* 1/4 teaspoon baking powder
* 1/2 cup sour cream(1/2 cup skim milk)

It was a very moist bread, almost like a pudding bread, and the children really liked it. Next time, I'll add another cup of flour to make it more firm and bread like.

Cool recipe! I am "Inn-Sitting" at a wonderful B&B in Amish Country this week.
I have many apples that people are not eating. I think I will bake the apples, mash them up and then use them in this recipe.

If you have to be in between homes, this is a nice alternative!

Check out the comments at the link...a few people had better/different results with amendments to this recipe. I think mine was bit softer because of the addition of mashed papaya.
