I made these tonight because my daughter loves crackers. The recipe is a combination of different recipes that I saw online and in my Amish cookbook.
Recipe:
3 cups flour
1/2 tsp baking powder
1/2 cup butter
One beaten egg
1/2 cup milk(or enough to make it workable)
3/4 cup grated Parmesan cheese
Salt
The flour portion can be any type of flour or grain. For instance I used 1/2 cup almond meal, 1/2 organic rye, 1/2 cup arrow root powder, and 1/2 cup organic whole wheat graham flour. The remaining one cup was organic white four. I meant to get wheat at the store, but picked up the white.
Mix all the dry, then add the wet, mix and knead well. Roll it out in a greased and floured jelly roll pan, lightly salt the top, and cut into squares with a pizza cutter. Prick the top of each square with a fork, bake for 30-35 minutes at 300 degrees.
Results: My dough was not rolled thin enough, and they were too thick for a cracker, and not crunchy. I think if I try this again, I'll half the recipe. A sharp cheddar cheese with some sort of seasonings(onion powder, garlic and paprika?) may have been tastier, but these were good too. Taste test with my daughter tomorrow.
Here's a recipe that I found after I made mine. I may try this next time: Vermont Cheese Crackers. There is a higher ratio of cheese to flour in this recipe, no milk(water instead), no egg, and they use yeast. The cheese is a cheese powder which apparently makes it more crispy. This cheese powder is expensive! So I found this online which shows you how to dehydrate cheese in order to make your own cheese powder. I think I need a food dehydrator now.
It may easier to just keep buying Annie's Homegrown(my daughter's favorite) at Target, but I'm willing to keep experimenting.
Update: Crackers were a hit with my daughter. I will make these again, next time making them thinner.
