I'm made this tonight:
1 egg
1/2 teaspoon dry mustard
1/2 teaspoon salt
2 tablespoons vinegar
1 cup salad oil

This turned out really good and literally took minutes to make! I used cider vinegar, and substituted one tablespoon of the lemon juice for the vinegar. Next time I'll try balsamic vinegar.
I plan to use this mayonnaise with Herbed Chicken Salad.

I am back from our vacation and trying to get caught up with my favorite blogs. Wow, I sure have a lot to read here.
