About Me

My Photo
A homeschooling mother of one teenager and a little. In 2001, I resigned from my 13 year position as a case manager to homeschool my oldest who was a preschooler at the time, and later a daughter who came along in 2005. This is by far the hardest job I've ever loved. My husband of nearly 20 years supports us as a fire fighter and EMT.

Made Your Own Curry Flavored Rice Mix

I seem to have a lot of energy today(??!!), so I've been busy making my own prepacked pantry items. I'm working on making it easier and more appealing to dine-in rather than out. I think we were all getting bored with our meals, so I'm adding some ethnic items to the dinner menu. This week and the next will be meals from India, or at least inspired by India.

Tonight I made Curry Flavored Rice Mix. This was so easy, and a great way to use up those spices which can sit too long in your cabinets. Four cups of rice fit well in this mayonnaise jar which I ran through the dishwasher.

The cooking directions for this rice seem a bit water heavy. I have always cooked rice using a one to two ratio - one cup rice for every two two cups water. The recipe mentions a different ratio which would make my rice very mushy cooking by stove top.

Ingredients:

* 4 cups uncooked rice
* 2 tablespoons curry powder
* 4 tablespoons instant minced onion
* 1 tablespoon sugar
* 1 teaspoon salt
* 1 tablespoon chicken bouillon(powdered form or crush a few bouillon cubes)
* 1 teaspoon instant minced garlic(I used powdered)
* 1/2 teaspoon ground turmeric

Here's another one I will try next time I have a jar, Herb-Rice Mix.

I need to do this more...Pre-prepare mixes...This is a good one, with curry, which is a spice I rarely use. Thanks!

This is an excellent idea! Thank you for sharing it! We loved herbed rice but for some reason just never thought of making our own!

Great idea, thanks! What kind of rice did you use?

Basmati would have been nice, but we used plain ole' white rice. :)
