One Dish Meal Recipe: Tangy Beet Chicken, Beans, and Vegetables

This was so good tonight. I used the can of .50 cent diced beets which I purchased at the dollar store last week. I planned the meal around this vegetable. The other ingredients were also very inexpensive, all from the discount grocery store, Save-A-Lot. I think the can of diced potatoes was .50 cents, and the collard greens and butter beans under a dollar.

I'd have saved even more if I did some of the leg work of preparing these vegetables and beans myself, so this is more of an economy of time type recipe.

The deep red beets against the deep green collards makes for a beautiful and nutritious one dish meal. Serves four.

Ingredients:

- Chicken
- Diced beets
- Can of diced potatoes
- Glory Southern Style Butter Beans
- Frozen collard greens
- Vinegar
- Brown and white sugar
- Teriyaki Sauce(homemade)
- White cooking wine
-Pepper, parsley, and garlic powder to taste

Instructions:

I cooked the chicken in a little oil, white cooking wine, vinegar, and a few passes of Teriyaki sauce. The liquid should come up on the chicken at least half way in the pan. Once it's been browned on both sides, add the frozen collard greens, diced beets, a combination of white and brown sugar to taste, and the seasonings. After it cooks a little on medium low, I add the potatoes, and toward the end, the butter beans.
